Sheep milk cheeses are my favorite (followed closely by buffalo milk cheeses) and I was very excited to find a 100% sheep's milk, soft ripened/bloomy rind cheese.
It is delicious, but not even close to anything that I was possibly expecting. It looks like a bloomy rind, Brie type but in both flavor and texture it is much closer to a cross between a good sheep cheddar and a good sheep feta (but obviously not brined). I've found sweet accompaniments to complement this one the best (for my tastes)- good raw honey (cranberry blossom if you can find it); orange marmalade; cherry-elderflower spread/jam. I'm going to see how it melts, it may make a great pasta sauce.
