Beneath the sidewalks of Bergen Street in Crown Heights, Brooklyn, the folks at Crown Finish Caves tend to an eclectic array of cave aged cheeses ripening on their shelves. Crown Finish repurposed a complex of 19th century tunnels originally used to lager beer, which provide just the right environment to bring out the best in their lovingly pampered cheeses. Collection includes:
Barnburner - a robust, blaze orange smoked cheddar that is bound with cheese cloth and aged for four months or more for a savory, belly-warming eating experience!
Gatekeeper - a triple cream cow and sheep mix washed with Graft cider. Decadent, silky and buttery with a subtle vegetal funk.
Tubby - a bold, nutty Alpine-style cows milk cheese made by Spring Brook Farm specially for Crown Finish. The wheels are aged for over a year, yielding a cheese that is reminiscent of tropical fruit and white chocolate.
Includes about 1 lb of cheese, serves 6-8 people.
