A new (to us) delight: Grafton Village’s version of the classic English clothbound cheddar! Wrapped in cloth and aged for a minimum of 7 months, these wheels are able to develop nuanced flavors in no time: soil, mushrooms, and fresh butter on the rind, complimented by a lemony and lactic paste. More delicate than most clothbound cheddars, it’s perfect on a cheese board or in your favorite cheddar-heavy dishes.
