Creamery 333 is a partnership forged between three men who've got more than their fair share of history and savoir-faire in the cheese business: French affineur Herve Mons, Arnaud Solant, cheesemaker and owner of Montchevre Goat Cheese, and Francois Ketrauet, cheese curator & general mastermind at Seattle-based distributor Peterson Cheese. The three friends wanted to create a company devoted to crafting unique, original cheeses, partnering with different producers across the United States. Their first cheese, Trivium, is made at Montchevre, aged at Crown Finish Caves in Brooklyn, and distributed by The Peterson Company.
