A creamy young goat cheese washed with New Glarus Belgian Red beer, a fruit beer made with Door County cherries. The washing lends a fruity, funky, and ever so slightly barnyardy quality to the otherwise tart and creamy cheese. As each wheel ripens, it develops a creamline under the rind that makes for a pleasing textural play - the creamy, buttery, gamey creamline contrasts the firm, chalky, tangy core of the cheese. Blakesville Creamery is located on the shores of Lake Michigan in southeastern Wisconsin, and head cheesemaker Veronica Pedraza transforms the milk of their herd into a delectable array of soft-ripened and aged goat’s milk cheeses. 6oz each. Pairing Notes: Amber ales, wild ales, belgian beer, sours.
