A square of pasteurized water buffalo milk cheese that is made at Quattro Portoni in Italy and aged at Crown Finish Caves in Brooklyn. Quattro Portoni is a caseficio (cheese house) located in the Bergamo region of Italy, just to the east of Milan. After the wheels cross the Atlantic and arrive at Crown Finish, they are washed with a variety of local beers, spirits, and wines, making the cheese a canvas for the expression of microbiological terroir between the washes and the original cheese. The paste is firm and clay-like, exuding fruity minerally, and earthy flavors with a slightly gamier, animal aftertaste.
