A tomme-style cheese from Landaff Creamery that is made by Deb and Doug Erb and aged by the Cellars at Jasper Hill Farm. Coated with a downy, earthy rind, Kinsman Ridge calls to mind the famed French cheese St Nectaire. This semi-firm raw cow's milk cheese is aged for 2-3 months. Early in the aging process the wheels are washed a few times per week to set the stage for a touch of funky, pungent flavor. Mature wheels of Kinsman Ridge are rich and milky graced with notes of earth, mushrooms, and pungent wet straw.
