Taking inspiration from Manchego, the Spanish sheep’s milk classic, Cato Corner’s cow’s milk version turns down the sharpness in a pleasant, approachable way. With less age (only 3-5 months) and more moisture than many of its Manchego counterparts, Womanchego is a fruity and nutty snacking cheese that also melts like a star. This crowd pleaser is made by hand in Connecticut, with milk from Cato’s 45 cows, and aged in their underground cave, where it produces its rustic natural rind.
