Pronounced like (and derived from) the word 'tome', this broad family of cheeses refers to weighty wheels aged for several months or more. The rinds vary from smooth to floofy, while some wheels sport beautiful patterns pressed into the rind by the baskets used to form the cheese. Expect well developed flavors and toothsome, pliant textures.
