A beautiful rustic rind tomme from the natural cheesemakers at Parish Hill Creamery. This cheese is a citrus-bomb. Acidic but smooth on the palate. Tart but also a little sweet. Mulchy on the nose, with a natural rind that tastes like peanuts. As the wheels get older, they develop more allium-y notes, which compliment the sharper, more aged profile. Peter Dixon and Rachel Fritz Schaal are all about intentional choices and unique cheese, and this product certainly showcases both.
