When we got word that The Farm at Doe Run was making a Reserve version of this marvelous cheese, we just had to have it! Six additional months of aging imbue these select wheels with a parmesan-esque bite that can’t be found in the younger iteration. Seven Sisters Reserve maintains its long umami finish, coating the mouth with a lingering nuttiness, and you can’t help but notice that deep burnt orange color. It’s the star of any cheeseboard it’s on!
