Ascutney Mountain has been a cornerstone of our selection for a long time, and we’re so excited to bring you its mature sibling: Ascutney Mountain Reserve! Cobb Hill’s intentional community and cheesemaking program are storied and seasoned, just like this extra-aged cheese. Cheesemakers Kerry Gawalt and (formerly) Lisa Marchetti wanted to see what would happen to Ascutney Mountain if they left it in the cave for a few extra months and (spoiler) it’s delicious! It has a drier, Parmesan-esque texture, which compliments a developed herbal profile. Think the bundle of fresh herbs you put into a chicken before roasting. Ascutney Reserve is perfect to feature on a cheese plate, or shave over salad or pasta.
