In just a 4 oz bloomy round, this cheese transports you to the the lush spring pastures of western Vermont. Aged for just three weeks, Crottina is simple, fresh and goat-y, with slight notes of citrus and barnyard. The paste is velvety smooth, and a thin, gooey creamline emerges as it ages.
