Sherry Gray is a double cream, ash-ripened cheese made from a blend of grass-fed milk from Jasper Hill’s own herd of cows and heavy cream sourced from Monument Farms in Vermont’s Champlain Valley. Keeping with their mission of creating a ‘Taste of Place’, Jasper Hill Farm named this cheese after Greensboro’s most legendary substitute teacher. Sherry Gray was a local icon - a New York City taxi driver and ballroom dancing instructor, he made his way to the northeast kingdom in the 1970’s and dedicated his life to living simply and generously and left an indelible mark on the community. Sherry Gray is bright and buttery with floral, nutty, and yeasty flavor notes. As the cheese ripens, the exterior becomes gooey and velveteen, while the interior remains a touch chalky and clay-like in texture. Pairing notes: Champagne and sparkling wines, white wines like French Chardonnay, light, earthy red wines like Gamay and Beaujolais, hard ciders, Saison-style beers, Belgian-style beers, and easy drinking lagers. 4oz.
