Favorite cheddar

I have to have animal rennet due to sensitivity to other rennet. That said...I have purchased this one 2x....definitely my favorite......also i found wrapping it it cheesecloth and then poking holes in a ziplock sandwich bag keeps it longer and doesn't mold if I get a big block....
