Inspired by the great tommes of the Savoie region of France, this mottled and marvelous wheel is ready to make its mark on the American cheese landscape. Caspian is made with raw milk from Jasper Hill’s own herd, which is meticulously managed to produce the absolute best milk for cheesemaking. Just like Tomme de Savoie, this cheese has a toothsome, somewhat musky natural rind, which reflects the complexity of the microflora in Jasper Hill’s cellars. The paste is yeasty and complex, with notes of citrus and garden herbs, and a sharply defined creamline that oozes out from beneath the rind.
Pairs beautifully with Pinot Noir or your favorite tart, funky beer. And why not add some crackers and nuts while you’re at it?
