Roelli Cheese Haus

Shullsburg, Wisconsin

Roelli Cheese Haus is located in Lafayette County, in the southwestern corner of Wisconsin near the border of Iowa, Minnesota, and Illinois. Adolph Roelli emigrated to the United States in the 1920's from Switzerland, and began a family cheese business that has been in existence for nearly 100 years. Chris Roelli, the fourth generation to make cheese for this estimable family business, made a bold move when he took over the reins. He decided to downsize the company, and steer the focus away from the commodity cheeses they had been producing towards original recipes of his own creation. The bet paid off - Chris Roelli is now widely considered one of the best cheesemakers in the country, and his Dunbarton Blue and Red Rock have garnered quite a cult following. Roelli Cheese Haus sources all of their milk from small scale local dairy farms who farm with respect for their land and animals.
