Pawlet from Consider Bardwell Farm - West Pawlet, VT

An Alpine tomme style cheese whose interior is dimpled with tiny holes and rivulets. The golden, buttery paste is simple and balanced with a deep nutty flavor. The finish is something to marvel at, leaving a bright tangy streak of flavor on the palate after the more subdued and gentle primary elements of the cheese give way. Pawlet is a shape shifter in the kitchen in addition to being a great cheese board cheese. It's perfect for cooking anything from grilled cheese sandwiches to gratins and mac and cheese! Aged for 5 to 6 months.

Mountain Top from Firefly Farms - Accident, MD

Mountain Top was the result of a happy accident - much like many cheeses throughout history! Wheels of Mountain Top are shaped like truncated pyramids like the famed French Valencay, but instead of being ripened with ash on the surface, Mountain Top is allowed to grow a coating of blue mold on the surface before the white, fluffy penicillium candidum blooms on the rind. The flavor is creamy and musky with a touch of earthy peppery blue. Firefly Farms source their milk from a cooperative of Amish farms in Maryland and Pennsylvania.

Alpha Tolman from Jasper Hill Farm - Greensboro, VT

This deliciously nutty Alpine-style cheese (similar in style to cheeses like Gruyere, Comte, and Appenzeller) is named for Alpha Tolman, a philanthropic dairy farmer who made an indelible mark on the town of Greensboro, Vermont, the town where Jasper Hill Farm is located. Among his many good works, building the town library was one of the most important. Young wheels of Alpha Tolman are washed with a cultured brine to cultivate a rosy orange rind that imparts a funky depth to the ripening paste beneath. When young, Alpha Tolman has milky, fruit and nut flavors and a smooth, creamy mouthfeel. Mature wheels are more bold and meaty with amplified butter and caramelized onion flavors enhanced by a rich and crystalline texture. Aged between 7 and 11 months in the Cellars at Jasper Hill.
