A pudgy rectangle of washed goat and cow’s milk curd from the Cellars at Jasper Hill Farm. In 2019, Jasper Hill Farm started a goat dairy, manned by veteran goatherd Ryan Andrus. They subsequently began making mixed goat and cow’s milk cheeses from this awesome new milk source! Eligo is named after a nearby lake, and is an unctuous and buttery cheese washed with salt brine. The wash lends a bit of yeasty, fruity funk to the cheese, which otherwise has a quite tangy, lactic, and custardy flavor. Eligo is only available for a limited season, so get yours today!
