Eligo is a pudgy rectangle of washed goat and cow’s milk curd from the Cellars at Jasper Hill Farm. In 2019, Jasper Hill Farm partnered with Ryan Andrus and Annie Rowden to start a goat dairy called Bridgman Hill Farm in Hardwick, Vermont, just a few miles from the Cellars. They subsequently began making mixed goat and cow’s milk cheeses from this awesome new milk source! Eligo is a soft, tangy cheese with a subtle, yeasty, and fruity funk - kind of like a domestic Taleggio with some goat's milk added for a musky punch of flavor! Pairing notesWhite wines like Viognier, and Gewurztraminer, Hefeweizen and Saison-style beers, Rose, light fruity red wines like Nebbiolo and Pinot Noir.
