When this cheese won Best of Show at the 2023 American Cheese Society conference, we couldn’t wait to get our hands on it. This understated Alpine stunner captivated ACS’s judges with its graceful and sophisticated presence. 8 to 10 months of age produce wheels with a harmony of layered flavors, from brothy brown butter, to bright, tropical pineapple. Each bite has a delicate balance of savory and sweet, with a barely-there kick of sharpness at the back of the throat. Made with milk from The Farm at Doe Run’s rotationally grazed cows, St. Malachi has the spirit of a teeming farmland ecosystem within its rustic, washed rind.
