A unique bloomy rind goat’s milk cheese from a 100% off the grid solar and wind powered farm in Vermont. The eponymous ‘thin red line’ is a dusting of smoked paprika, which provides an eye-catching contrast to go along with its tongue-tingling sweet spice. The result is a flavor that is a hybrid of fresh chevre and chorizo. Thin Red Line has quickly become one of our favorite cheeses in the Lazy Lady Farm repertoire.

I just fell in love with this producer. If goat cheese is your thing, put Lazy Lady Farm on your list. They’re seasonal too, so new deliciousness lurks just around every corner. Added bonus: all done off the grid. How old school cool is that?

Thin Red Line is Lovely
The subtle smoked paprika dusting in the middle of this perfect little goat cheese adds such nice balance to the flavors of the paste center and the riper outer layer and bloomy rind. Highly recommend.
