Cheddar, one of the world's most popular cheeses, may have originated in the British Isles, but at Saxelby Cheesemongers we like to think that the Americans have really nailed it on the cheddar front. Cheddar is both a noun and a verb - it's a type of cheese and also what is done to the curds during the cheesemaking process to bring about cheddar's signature sharpness and crumbly-yet creamy texture. There are so many different styles, textures, and flavor profiles of cheddar cheese that we decided to create a collection to showcase them all! Includes four hand cut wedges:

Shelburne 2yr Cheddar - A rich, tangy, onion-y, and classically sharp cheddar cheese from beautiful and historic Shelburne Farms.

Red Rock - A bright orange cheddar cheese / blue cheese hybrid from Roelli Cheese. Red Rock is earthy and sharp with a hint of caramel sweetness. The cheddar flavors mellow the blue flavors in this unique and delicious cheese, making it a true 'gateway blue' for those who aren't normally fans of blue cheese. A true American original!

Vault 5 - A cave-aged collaboration between Jasper Hill Farm and Cabot Creamery that is dense and fudgy with sweet, toasted, dulce de leche flavor overtones.

Cabot Clothbound - Quite possibly the king of American cheddar cheeses. Tastes like Parmigiano Reggiano meets cheddar! This bandaged, cave aged cheddar is aged in the Cellars at Jasper Hill for over one year, resulting in a nutty, brothy, and savory flavor profile.

Includes 2 lbs of cheese and serves 10-12 people.
