Whitney - 2022 ACS Best in Show! Jasper Hill Farm makes wheels of Whitney in the style of mid-elevation mountain cheeses of the Alps. The curds are rinsed with water during the cheesemaking process to create an even, elastic texture. During the maturation process the wheels are washed with a mixture of morge, a cultured brine, and spent yeast from the tanks of ‘La Garagista’, a terroir-driven natural winemaker in Vermont. The flavor marries equal parts of mellow, milky goodness and fruity, earthy funk.
Cayuga Blue - Pronounced ‘Cay-oooga!’ This beautifully aged goats’ milk cheese from Lively Run Goat Dairy ranges from supple and creamy to flaky and firm depending on its age. More of an aged goats’ milk tomme than a traditional blue, Cayuga Blue varies greatly from wheel to wheel. It can be full of strong musky flavors, fruity and fermenty, or sometimes sweet and malty.
Merry Goat Round Spruce Reserve - A bark-wrapped wheel of over-the-top gooey goat’s milk cheese from Firefly Farms. The rich, mustard, juniper flavors imparted by the bark marry beautifully with the gooey, mushroomy paste of the goat’s milk cheese, creating a wallop of flavor that you won’t soon forget!
Includes about 1.5 lbs of cheese and serves 10-12 people.
