Ascutney Mountain has been a cornerstone of our selection for a long time, and we’re so excited to bring you its newest, most mature sibling: Ascutney Mountain Reserve! Cobb Hill’s intentional community and cheesemaking program are in a beautiful period of growth and change, and cheesemakers Kerry Gawalt and Lisa Marchetti have been tinkering with some of their traditional offerings. They wanted to see what would happen to Ascutney Mountain if they left it in the cave for a few extra months and (spoiler) it’s delicious! It has a drier, Parmesan-esque texture, which compliments a developed herbal profile. Think the bundle of fresh herbs you put into a chicken before roasting. Ascutney Reserve is perfect to feature on a cheese plate, or shave over salad or pasta.
