Thankfully for us cheesemongers and all cheese-loving individuals, there are some folks in the cheese world who are positively obsessed with what they do. The team at Jasper Hill Farm is the perfect example, and their sensory evaluation process highlights their commitment to putting out some of the best cheese in the world. Using their spectacular palates and scientific approach to tasting, the Cellars at Jasper Hill releases a few select “vintages” of Cabot Clothbound Cheddar they deem to be outstanding under the distinction of Black Label. Cabot Clothbound Cheddar is one of the Cellars' signature cheeses. It's crumbly texture and sweet, nutty flavor have made it one of our perennial best-sellers! Black Label Cabot Clothbound Cheddar is extremely limited - only a few batches are released for sale each year. Pairing notes: Lagers, IPA’s, dry ciders, Chardonnay, Chenin Blanc, full bodied reds like Nebbiolo and Cabernet Sauvignon
