Using their spectacular palates and scientific approach to tasting, the Cellars at Jasper Hill releases a few select “vintages” of Cabot Clothbound Cheddar they deem to be outstanding under the distinction of Black Label. Cabot Clothbound Cheddar is one of the Cellars' signature cheeses. It's crumbly texture and sweet, nutty flavor have made it one of our perennial best-sellers! Black Label Cabot Clothbound Cheddar is extremely limited - only a few batches are released for sale each year.
