This high quality butter has a unique flavor and scent. It tastes and smells like cheese, which is not my favorite tasting experience for butter, especially when baking sweets. I prefer the flavor of sweet cream, which reminds me of Maison Bordier butter in France. However, I could see this butter excel in specific applications, perhaps more savory recipes, or a sweet recipe where the tang can be appreciated. It has a smooth and creamy mouth feel. Truly superb, with a caveat.
