A bouquet of wildflowers, in the form of cheese! High Lawn Farm uses their own local wildflower and berry-infused brandy to wash the cheese and enhance its flavor. Aged for 18-24 months, wheels of Siegfried’s Pride slowly develop deep, nuanced umami flavors that layer beneath a pleasant acidity and floral aroma. Brown butter and pineapple on the nose, and an ever-so-slight vegetal bitterness on the rind.
All of High Lawn’s cheeses are unique expressions of their pure Jersey milk. After farming Jersey cows for over 100 years, High Lawn understands the Jersey breed like few other farms do. Jersey milk has higher levels of vitamins, minerals, and protein than other breeds, giving cheeses made with it a complex, sweet flavor. These small cows also use less land and resources than other breeds, making High Lawn’s operation that much more sustainable.
