Southwind is Woodlawn Creamery's washed rind, Raclette-style cheese. Made with raw cow's milk and washed in a saltwater brine, and aged for 2-4 months, Southwind is mild, milky, and and meltable, perfect for an afternoon snack or a full-blown Raclette party. This versatile wheel is named after the 6th generation farm that neighbors Woodlawn, where the farmer once made a similar cheese. That cheese went out of production, but Southwind has stepped in to fill the void it left! Pair it with roasted potatoes, cornichons, and a dry white like Chenin Blanc or Pinot Gris.
