This pressed curd, washed rind cheese is sharp, complex, and boasts a true taste of Massachusetts. The Hazy IPA it’s washed in comes from Antimony Brewing in Lenox, just 5 miles from where the cheese is made. The final result? Slightly crumbly, cheddar-esque wheels with a savory, brothy base and a lingering mirepoix finish. The IPA wash contributes a tart brightness that mingles with the cheese’s umami depth.
All of High Lawn’s cheeses are unique expressions of their pure Jersey milk. After farming Jersey cows for over 100 years, High Lawn understands the Jersey breed like few other farms do. Jersey milk has higher levels of vitamins, minerals, and protein than other breeds, giving cheeses made with it a complex, sweet flavor. These small cows also use less land and resources than other breeds, making High Lawn’s operation that much more sustainable.
