A toasty collaboration between Lively Run Dairy and Hopshire Brewing! Lively Run's Gouda (made from a traditional Dutch recipe, but aged unwaxed on wooden boards) gets an additional layer of flavor when the cheesemakers soak the curds in Shire Ale for three days. This dark ale imbues its hay-like malt and slight coffee-like bitterness to the cheese, making it sing in a slightly different tone than your average gouda.
