Calderwood - Calderwood is an exclusive collaboration between Saxelby Cheesemongers and Jasper Hill Farm that aims to celebrate how the diet of a cow affects the cheese it produces. Coated with hay from the pastures surrounding Jasper Hill, Calderwood provides a true taste of place.
Camembrie - Buttery and gooey paste, enveloped by a thin, mushroomy rind, made with fresh Ayrshire cow's milk at Blue Ledge Farm. Camembrie is an exemplary American Brie/Camembert hybrid.
Shepsog - A cheddar-y tomme made with 50% sheep's milk and 50% cow's milk. Caramelly and nutty, with hints of fresh grass and baked potato, this cheese from Grafton Village leaves little to be desired!
Sheep Feta - This specific feta, from Hidden Springs Creamery, is extra creamy due to the high levels of butterfat present in sheep's milk. Dense, yet smooth, it tastes of brine, fruit, barnyard, and earth. It's just waiting for some artisan olive oil!
Lake's Edge - Chalky, tangy, and melts in your mouth! A delicate. bloomy rind and streak of vegetable ash surely make this goat's milk cheese stand out in a crowd.
