When this cheese won Best of Show at the 2023 American Cheese Society conference, we couldn’t wait to get our hands on it. We did have to wait a little bit, but it’s finally here! This understated Alpine stunner captivated ACS’s judges with its graceful and sophisticated presence. 8 to 10 months of age produce wheels with a harmony of layered flavors, from brothy brown butter, to bright, tropical pineapple. Each bite has a delicate balance of savory and sweet, with a barely-there kick of sharpness at the back of the throat. Made with milk from The Farm at Doe Run’s rotationally grazed cows, St. Malachi has the spirit of a teeming farmland ecosystem within its rustic, washed rind.
