A delicate drum of pasteurized cows’ milk cheese with a bit of cream added for good measure. This wrinkly bloomy rinded cheese was originally inspired by similar cheeses made along the English/Welsh border. Over the years Zingerman’s Manchester has morphed into its own entity - the paste is dense and fudgy, and the flavor bounces between tangy cultured cream, yeasty and toasty freshly baked bread, and mushrooms.
